A quantitative method, based on spme gc-ms, for the quantification of olive oil selected volatile compounds was developed. The method was used to study the variation within the olive oils from the different genotypes of Tuscan olive trees conserved at “Santa Paolina” experimental farm (Follonica, Italy).
