We studied the volatile organic compounds (VOCs) profile of model cheeses obtained from milk of individual cows. Our main goal was to investigate the influence of factors related to the dairy farm type and individual animal on the profile of VOCs. We observed a trend of some volatile compounds in relation to days in milk (DIM), lactation number (PARITY) or milk yield (MILK) of indivudual cows or farm managment tipes (HERD). Many VOCs were affected by herd type and by parity, days in milk and milk yield of individual cows showing a trend similar to that obtained for milk fat or protein contents. To our knowledge, this is the first report on characterization of VOCs from model cheeses obtained from milk of individual cows
