The stable isotope ratios (SIR) of bioelements have been intensively used for the detection of fraud prohibited by European legislation in juices (sugar addition, watering down of concentrated juice). In this work (D/H)I, (D/H)II and 13C in ethanol, 13Cpulp, 13Csugars, 18Owater, 15Npulp, 2Hpulp and 18Opulp, were determined for the first time in about five hundred authentic Italian citrus juices officially collected by the Ministry of Agricultural and Forestry Policies since 1996. The range of variability in genuine Italian citrus juice samples is presented here, along with the relationships between SIRs and their compliance with the limits suggested by AIJN.
