In this work we studied how the secondary metabolites of the phenylpropanoid pathway of four Vitis vinifera varieties changed during the maturity of the fruit and under two irrigate treatments (water deficit versus control). 40 phenolic compounds were detected and quantified with a modern LC-MS/MS method and the multivariate analysis of the data set provided interesting information about each variety phenolic profile behavior due to the experimental design.
