In this study, proton-transfer-reaction time-of-flight mass spectrometry (PTR-ToF-MS) equipped with a multipurpose head-space automated sampler (autosampler) was successfully applied for investigation of VOC profiles of food samples (beef, fish, and cauliflower) first raw and then cooked in automated way inside the autosampler. This methodology is of relevance both for process optimization in the agroindustry and for the better selection of raw materials
