There is still an ongoing discussion whether white wine needs some oxygen to develop or not. In a collaboration between Nomacorc, Mezzacorona winery, DANI Instruments, and Fondazione Edmund Mach we designed an experiment to find new facts in this discussion. Different white wines were bottled with and without air in the headspace. After two months of storage the wines were tasted and the volatile fraction was analyzed either by HS-SPME or DHS, both coupled to GCxGC-TOF-MS. The differences in the sensorial evaluation were very small and also the SPME approach obtained only a few compounds with very small differences
